Running true to form I waited until the last minute to enter. I would like to say there is a good reason for this, but really there isn’t, I actually do my best work when I am under pressure, also this way my post is fresh in your mind when it comes time to vote on Monday!! Sneaky aren’t I!

Well, there are so many good entries already, it is a tough competition, so I am just going to cut to the chase and tell you who I am and why I blog and let you decide for yourself, if I have what it takes.

<a href="http://3.bp.blogspot.com/_Cqe3P7vzaGE/TJaBL3_W6-I/AAAAAAAACXc/jyFEeJrv75c/s1600/My+Pictures1.jpg" imageanchor="1" style="margin-left: 1em; As in 2 1/2 hours minimum away from a Wal-mart in any direction, midlle of no where. I miss large grocery stores and restaurants. I love to cook and bake for my family and friends. In our neck of the woods I am considered talented in both areas, which is good since we don’t have many options for eating out. I am best known for my caramel rolls (or crack rollls as some affectionately call them) and cupcakes. And in our family I make the birthday cakes for the grandparents as a special request. I love trying new things and therefore I am addicted to cookbooks and cooking magazines. My favorite website for new recipes is Tasty Kitchen. I love Tasty Kitchen! It hasn’t steered me wrong yet. Although as much as I love new recipes and trying new things, I can’t leave them as is, I am always adding new things, making them my own and I encourage that with whatever recipes I share on my site. I always got in trouble in Mom’s kitchen, because I would often add something to the pot when Mom wasn’t looking!

I started my blog as an outlet for my dream of having a bakehouse, thus the name Gracie B’s Bakehouse. I am still forming my blog and creating it to be more of what I was hoping for. So, I am using this contest to help me become better at blogging about food. Recently, I spoke to someone about making my dream a reality. It may or may not happen but in our discussion I shared another passion of mine, that has been on the back burner for quite some time, with raising a family and all, and a suggestion was made as how to incorperate it into a bakehouse. Now, I have decided to act on the suggestion and I am adding it to my blog. In the near future I am going to share the first chapter in a story I have been dreaming about for some time. You may ask,'how does that relate to food?' Well, the heroine of the story deals with some horrible heartaches in the beginning of the story and to deal with it she opens a bakery and finds healing through that and other things that happen along the way. Wouldn’t you like to know what happens? I do!

Do I have what it takes to be the next food blog star?

I have always been terrible about selling myself. That is just who I am. But I know that I could rise to the challenge that this would present. It combines what I am best at: cooking, baking and writing. What sets me a part from other bloggers is the fact that I do live in the middle of nowhere and I don’t have as many options as others do when it comes to choices at the grocery store. Therefore what I create is accessible for everyone no matter where they live. Also, as a coordinator and host mom to exchange students I like to highlight authentic meals from foreign countries. Last year we opened our home to students from Thailand and Spain and they shared their favorite dishes from home with our family and their friends. This year we have young friends from Taiwan, Thailand, Finland, Switzerland, Germany, Chile, Italy, and Spain. I hope to share more with my viewers about our authentic meals. But what I love most about these meals is that the students themselves are the ones cooking and creating and I am just there to help out with a little kitchen guidance.

To sum it all up, I love writing and I love being in the kitchen. Also, I love sharing my kitchen with others, to learn from them and to teach them something I know. It is the one place I am comfortable and I know that what I have to share through my posts is different than most other blogs: my version of restaurant favorites, my fiction, and authentic meals made by students who want to share their world with us are just a few of the reasons I could be the next Food Blog Star! And don't forget to vote starting tomorrow.

A future baker in our midst

June brought the annual BizKidz business camp for students that are in Middle School. It is a week long course on creating your own business. There is always a variety of businesses represented. They learn so many things about starting a business including start up costs, profits, loss and so on. On the last day of the camp they open up for business and sell their wares. Chewy participated this year and had his own sweet shop. He was a baking fool for a few days and this mom did a great job (in my opinion) :) of letting him do almost everything. I was there to help when needed, but he really did the majority of the work. His brother, sister, and dad even helped with the packaging. It was a family business and of course it fell on one of my busiest weeks of the summer, so everyone was needed at some point, but we managed not to go crazy.

I showed him a few of my favorite blogs & these were the things he chose to do:

<a href="http://2.bp.blogspot.com/_Cqe3P7vzaGE/TIQjWH3kpPI/AAAAAAAACWE/F-UNJ0cUKI4/s1600/DSCI0010.JPG" imageanchor="1" style="margin-left: 1em; or her burger and fries?

He also made my famous (around here, anyways) cupcakes. His shop was a great success and he plans on doing it again next year, only this time it won't be sweets. Also, his sister will be joining in the fun and I hope and pray that it doesn't fall on the same hectic week it did this year because she is also planning to do something food related. On a lightly floured counter form into a disc and roll out, if dough does not cooperate, you may want to chill it for a short time (1/2 hr). Once it is rolled to desired thickness, cut out with round or scalloped cookie cutters of preferred size, two cookies will be used for each serving. You can chill cut-out cookies on baking sheet for 10 -15 minutes to hold their shape better, but that is optional.

Bake in a 350 degree oven for 8-10 minutes or until lightly browned. Once shortbread is cool you may assemble the strawberry shortcake stacks.

*** In the past, I have just made one big shortbread cookie and cut it into squares or wedges, but I think the cutouts would provide better results as well as prettier than wedges!

Home is . . . There was a bar and grill that we went to occasionally when we lived in the KC area and when we went I always ordered the same thing - Maui Chicken. This is my version. I will also include how I make asparagus. My children love asparagus! I always serve the chicken with Uncle Ben's wild rice. Dave usually does the grilling, because does such a superb job with it. I am one lucky lady!!!

Maui Chicken

4-6 boneless, skinless chicken breasts
Lawry's Mesquite Marinade
4-6 slices of cheddar cheese
15 1/4 oz can of pineapple slices
BBQ sauce

Marinate chicken in the mesquite marinade for at least 30 min. You may marinate longer if you would like. Grill over medium heat until cooked through. Add cheddar slices the last couple of minutes of grilling. Grill pineapple slices, a couple minutes on each side. Place on top of cheddar. Serve with a side of BBQ sauce.

Enjoy!

Grilled Asparagus

Rinse and trim asparagus. Put asparagus in a pot and just cover with cold water. Bring to a boil and blanch for about 2 minutes or until bright green. Rinse several times with cold water. Drizzle with olive oil. Salt and pepper. I prefer kosher salt for this. Make sure all are coated with oil. Grill over medium heat for 3-4 minutes. Enjoy!!

This is a repost, I am linking up to Our Homeschool Home's On the Grill party, please head on over and check out what people are grilling in their backyards!

Oh, Monster Cookie, how can I bake you?

Oh, Monster Cookie, how can I bake you? Stir and then add M&Ms and chocolate chips. At this point I find it is easier to use my hands to mix, the bonus is silky smooth hands.

Using a large teaspoon or ice cream scoop onto cookie sheets. BAKE at 350 for 12 -15 minutes.

NOTE: We only make a dozen or so at a time and keep the cookie dough in the fridge until we are ready for another fresh batch of cookies. His request was a Lady Baltimore cake. This recipe was somewhat of a challenge to find and make, but I did it.

<a href="http://4.bp.blogspot.com/_Cqe3P7vzaGE/S88smnAOBaI/AAAAAAAACJs/xtom9Orkytk/s1600/DSCI0065.JPG" imageanchor="1" style="margin-left: 1em; I sent pieces home with some of them, including the birthday boy. We decided not to scare him with 92 candles and only put 10 on, he didn't need any help with blowing the candles out, even though A was standing by waiting to assist.

If you are interested in a recipe for Lady Baltimore, I suggest you venture over to Epicurious. I was a little intimidated by the frosting, it seemed like it took an hour to whip until cool, but it worked and as I have said before those that tried it loved it. It is not one of my favorites, but I enjoyed making it for the birthday boy.

On Sunday, I made a second cake for my kiddos and my hubby liked it so much I made it for our hunters' first meal. Sunday we named it Dave's Yellow Cake but last night when I made it again I entitled it Dave's Mistake Cake. When I was preparing to make it the first time I sent him to the grocery store for a yellow cake mix and he came home with a lemon mix. It was yellow and to him that is all that mattered, well it made the cake even more enticing than the yellow mix, so we are keeping it. Here are some pictures and then I will share the recipe.

<div class="separator" style="clear: both; Line 2, 9-in pans with aluminum foil, leaving extra to use later to lift cake out of pans. Grease pans.

Mix orange juice, egg yolks, and cake mix. Beat on medium speed for 4 minutes. Pour into pans.

In a large bowl, beat egg whites and cream of tartar on high speed until soft peaks form. Gradually add one cup of sugar and beat until stiff peaks form. Gently spread meringue over cake batter and bake for 35-40 minutes. Meringue should be golden brown. Cool completely.

To assemble: lift edges of aluminum foil to remove cakes from pans, gently pull foil away from cakes. Whip whipping cream, 1/4 sugar, and vanilla until stiff peaks form. Place one cake on a plate with meringue side up, spread 1/2 of whipped cream on top of meringue. Layer strawberries on top of whipped cream, then place second cake on top and repeat with whipped cream and strawberries. Enjoy!!!

*******

Today, I am linking up to I'm Lovin' It over at Tidy Mom. Please head on over and show everyone some love. Also, check out Friday Favorites on Simply Sweet Home.

Easter Memories

Easter is one of my favorite holidays. Spring brings such a feeling of joy and newness after the long hard winter. Grass is turning green, tulips are poking their heads up, birds are singing and we take time to celebrate our risen King. Easter is a glorious time of year.

We begin our celebration by dying eggs, this year we went crazy and sprinkled them with glitter!! And of course we used some for deviled eggs on Sunday. Sandy at Reluctant Entertainer has a fool proof method for boiling eggs, I know, I tried it. We joke that I can do anything in the kitchen except boil eggs and fry bacon. Well, now I can boil eggs and as for the bacon, I'll just keep sticking it in the oven and if it needs to be fried, I will have Dave do it. He likes to feel needed!!!

As you can see, we didn't fair too well on the whole picture thing. No one wanted to behave, if anyone knows the trick to getting your child to smile naturally, I would love to hear about it.

We also had the customary egg hunt after lunch. Dad and Grandpa always get very creative with where they hide the eggs. We missed the cousins this year, but we still had a great time. Almost every Easter is spent at my in-laws. They have a beautiful home in the canyons. And every year, well at least the last few years, we all get the flu!!! I am not kidding. This year no one was sick, thank goodness, but the last few years it ran through the family. Last year I was sick for two weeks! This is one tradition we hope is over!!

We are blessed to live near Dave's grandparents, both sets and a few of his aunts and uncles. I love that our children know their great grandparents. They enjoy spending time with them and of course the greats love it too.

Well, since this is my baking blog I should share with you about our meal. I only needed to do one thing this year and that was green bean casserole, a family favorite. My oldest doesn't like gravy, can you believe it, so he uses green bean casserole for his 'gravy' - crazy boy!! We weren't able to get together for Christmas this year because of the storm, so we did turkey, mashed potatoes, gravy, stuffing, green bean casserole, rolls, deviled eggs (which I made as well), homemade cranberry sauce, chocolate cream pie, pecan pie, and cream puffs. Everyone has their traditional meal, in my family Easter meant ham, but you know, it really doesn't matter. Making food that people love because you love them, that is the important thing. Spending time together with family and friends around the table that is the best thing about holidays and any other day of the year.

Today I am linking up to Home is . . . over on Reluctant Entertainer hop on over and see what others are sharing about their Easter memories.

Home is . . .so many things

Today I am linking up to Sandy's Home is . . . Party over on Reluctant Entertainer. Her theme for this week is scent. There are so many scents to me that mean home, every season I have a new scented candle that reflects what that season means to me. Spring usually means lilacs to me. My grandparents lived across the street from my school and they had a whole hedge of lilacs for us to pick from. Also, the smell of baking bread invokes Grandma's house. It is a new scent in my home as well. Yesterday, was the first day I had ever made homemade bread. I made it again today. Eight loaves total. Some have been given as gifts. Some have been used for sandwiches and french toast. Home is baked bread.

Home is the smell of fresh cookies, like the ones I am making at this moment for our church's Resurrection Celebration this afternoon. I am in charge of helping 40+ children decorate their "Easter Eggs." I remember getting off the bus and opening the door to the aroma of chocolate chip cookies or any other variety that Mom would have waiting for us. I don't do that as much as I should for my own dear children. Something I am working on rectifying.

Home is chocolate cake. The cake of choice for birthdays or other celebrations for many members of the family. This particular cake is being sent to feed the youth group this evening.

Home is also the smell of a clean kitchen or bathroom. Home is the scent of fresh clothes right from the dryer still smelling of April flowers and warm to the touch. Home is the clean scent of a freshly bathed child snuggled onto your lap. Home is my husband's cologne because home is where he is. But, I think most of all the scent of home is whatever is cooking in the kitchen, because not only does it fill my home with the scent of love, but it can be given away so that we can share our home with others.

**Oh, and normally I do not do this much baking. This just happened to be one of those days when everything happens at once. Know what I mean? So, please take some time and check out the other 'scents' at Reluctant Entertainer.

Our Kitchen: Closer to complete

Being married to a carpenter has many perks and today I am showcasing one of them. The above picture was my Valentine's present. There is a story behind almost every piece in our kitchen. We have been blessed over and over through out our married life and this one room is home to several of our blessings. The copper hood above, as well as the stove top and cabinets that house the stove top were given to us by a friend of my dad's when she remodeled her kitchen. We used quite a bit of elbow grease to clean the hood and Dear Hubby had to cut it down to fit the space we had. Also, the tile back splash was a find. In one of our recent homes, we found several boxes of these ceramic tiles. I am not sure what era they are from, but they were made in Italy! It took me awhile to warm up to them, but I love them now. I came home after a weekend spiritual retreat to find all of the tile up. I have an amazing husband.

The same lady that gave us the stove top and hood also gave us the refrigerator and slab of butcher block, oh, and also the drawer cabinet with pulls. DH continued the tile around below the cabinets and window to the fridge. He also finished evened out the butcher block that is now attached to an antique wash stand we inherited from my mom.

The dishwasher was given to us by my in-laws, they had updated their kitchen recently and I love having a dishwasher now! DH put in new flooring and counter-tops and sink. I did all of the painting of cabinets and walls with the help of my mother-in-law. I still have some painting to finish and some matching door handles to find, but I am one content lady.

Finally, the cabinetry and wall oven were also a gift from the friend of my dad's. I dream of adding another oven someday, but for now a microwave spot will do. DH is planning to trim out around my microwave so it looks like it belongs until I find an oven. As you can tell, some pictures are a little older than the first one. When you are the ones doing the work, it takes time, but it is so worth it.

I am so thankful for the many ways the Lord has blessed me, mostly for my family and friends, but also for my kitchen. :)

Today, I am linking up to Best DIY projects of March. I did want to share a few more pictures from the party. The girls had a great time, being girls. They came all the way here from Down Under, or so they said, and they had the accents to prove it! They danced, they sang, they posed, they painted finger nails, and got all dressed up. They grow up way too fast!!!

Princess Grace's 9th Birthday Part 1

Today's party was a last minute thing, we just didn't know if it was going to work for us this weekend. It really came together in a short amount of time. I was really proud of myself for keeping the cost to a minimum. I only spent $1.75 per girl for party favors which consisted of a card game, a feather boa, a necklace and two bracelets. Not, too shabby, if you ask me!
I used quite a few things from around the house to pull it together and the paper plates only cost $1.
Once again, my cake got a little top heavy, but it tasted great. The family favorite is Bacon Cheeseburger. Our Bacon Cheeseburger Pizza consists of a garlic Alfredo/mustard sauce, hamburger, pieces of bacon, diced pickles, Roma tomatoes, red pepper flakes, and several types of cheese. But, since it is sorta a family secret I can't tell you specifics, so I have given you the list of ingredients to play with and make your own. I promise you will not be disappointed. I AM going to share with you the recipe for the pizza dough, you will be able to create all kinds of pizza, bread sticks, Stromboli, and whatever else your little heart imagines. That is what I love about cooking, it is your imagination and creativity that takes something from good to unforgettable! Please use this recipe and imagine away and please share with me what you have done!

Pizza Dough

1 TBSP honey
1 TBSP yeast
1 cup warm water
1 TBSP extra-virgin olive oil
3 cups flour
1 tsp kosher salt

Combine warm water, yeast and honey in a small bowl and allow yeast to rise. (I find that water that matches the temperature of my wrist, maybe slightly warmer, has not failed me when coaxing yeast to rise.) Once yeast mixture has doubled in size add it to the flour, salt and EVOO. I use my stand mixer fixed with a dough hook. Mix (if dough is too sticky add a little flour; if too dry a little water) until dough clings to the hook and there is no dough on the sides of the mixing bowl. Pull dough off hook and set bowl aside with a damp towel over the top, to let rise. Once it has doubled in size, punch the middle of the dough down and let rise again. This recipe will make two decent sized thin crust pizzas or several individual sized pizzas, your choice. Shape into pizzas either by rolling dough out or shaping with your hands, depends on the thickness of the crust desired. We top with the ingredients of our choice and bake in a 500 degree oven for about 10 minutes.

Enjoy!

My First Give-Away

I have been sharing with you lately about hosting foreign exchange students. This next school year we will be hosting a girl from Switzerland. She will be sharing a room with our daughter, so we are using this time to consider redoing her room. This summer my husband is planning on building her bunk beds and a really neat desk area. So we have been looking at kids bedding that will appeal to a nine year old and a 16/17 year old.

These are some of the bedding sets that stood out to me. What do you think? Gracie's room is painted sour apple green, and it hasn't even been a year since we painted so I am not looking to paint again. She is even willing to use her birthday money for her new bedding. Her words were, " I think bedding would be a better choice than toys for my birthday. Don't you agree, Mom?" I can't argue with her on that one!

Have you ever considered hosting a foreign exchange student? You don't need to redo a room to do it. We have been working on her brothers' room and she wanted to know what we were going to do in her room. This is giving us the incentive to make it happen sooner rather than later. If you would like more information on hosting please visit EF Foundation for Foreign Study, they are a great company and they have doing this since 1979.

Now, for my first give-away. In this post I shared our new tradition of showcasing food from another country or region once a month. I am excited to offer you the opportunity to win the above Nordicware scone pan, so you can take a 'trip' to the British Isles and have some high tea with scones and clotted cream right in your very own home. Or how about some Texas chili with jalapeno cornbread. Either one sounds good to me. All you need to do is visit this site and share with me something you fell in love with. You can receive another entry for tweeting about this give-away. Or you can become a follower of my blog for another entry. And finally, if you visit the EF Foundation site and let me know you can receive another entry. We just don't have the opportunity to try new things unless we do it ourselves. So when our young friend, Prem, who I introduced you to here, wanted to share some food from his homeland we jumped at the opportunity. It began a new tradition in our home, one Saturday a month we are going to serve something authentic from another country or region and invite several couples we haven't yet had in our home. Next month it will be Spain, I think, and our young friend from Spain will share some food from her country with us. As with Prem, we will let her choose who the guests will be.

I have to admit, I fed my children mac & cheese before everyone came over because I knew spicy Thai would not be something they would enjoy. They gladly complied and after they finished their supper went to the boys' room to watch a movie and fell asleep.

Our young friends came over in the morning and we made sure we had everything we needed and went to the store to find what I didn't have. Another thing about living in very rural America, rural as in 2 1/2 hours from the closest Walmart, you do have to plan ahead some, because many times ethnic things are not available in the local grocery. Thankfully, we have a great friend who runs one of the grocery stores and he does his best to order in special items. Well, back to our day, when we finished our shopping we took a break before we went to work since we discovered that most of the five items they would prepare did not take much time. I enjoyed having a kitchen full of chopping, slicing, washing, cooking activity when I just needed to provide a small amount of guidance from time to time.

It was a wonderful memory maker for me as well as our guests. Laughter was in great supply as many people kept their chapstick close by to cool the burn and my eldest was ready in the kitchen to bring milk or bread for anyone who thought the heat was too much. Thankfully, it wasn't needed. We did have a lot of spice and heat and some took VERY small portions of meat and large portions of rice, but every person there enjoyed everything they tried and they tried it all.

Here is the menu for the evening:

Tom Yum Soup, a spicy shrimp soup

Laab, a spicy ground chicken served on rice

                                                              Chicken Pad Thai, pictured above

Pad Prik Khging, a spicy chicken and green bean served on rice

                                                              Tom Ka, a coconut/chicken soup

We had a wonderful time and enjoyed great food prepared by some great kids. If you love to have people in your home, please consider hosting a foreign exchange student for a school year. It is a wonderful experience for all involved. EF Foundation for Foreign Study is a great company to contact, they have been placing exchange students in homes since 1979.

I also want to let you know that I am going to be doing my first give-away so please check back in the next couple of days for an opportunity to win something for your kitchen.

Jalepeno Pheasant Poppers

This is one of those recipes that has taken over our family's wish list when there is pheasant in the freezer.

Jalepeno Pheasant Poppers.

1 bottle of Italian dressing
4 pheasant breasts
8 jalepenos, seeded ( if you like heat, 4 if you prefer milder)
cream cheese, softened
8 bacon slices
toothpicks

Marinate pheasant breasts in Italian dressing for at least 20 minutes. After they are marinated, slice breasts in half. Stuff jalepenos with cream cheese. Use 1/2 of a jalepeno if you don't care for too much spice, use a whole one if you like heat. If you really like heat, you can leave a little bit of the seeds! Wrap 1/2 of pheasant breast around desired size of jalepeno. Then wrap bacon around the pheasant. We usually cut the bacon in half, as well, and use one half to wrap arount the sides and the other 1/2 to wrap end to end. Stick with toothpicks, to hold everything together. Grill over medium heat until cooked through, about 10-15 minutes. My hubby says when the bacon is cooked, it is a good indication that it is ready! I hope you enjoy this fun appetizer, but we actually eat it as a meal most of the time!

Pink Week Give Away at Blooming on Bainbridge

Please head on over to Blooming on Bainbridge, she is hosting Pink Week Giveaway. The original recipe is from an acquaintance, but I made some changes.

This is how my husband feels about this soup, and it is actually making me very hungry, just looking at these pictures.

Baked Potato Soup

4 med/large baking potatoes, baked and cubed
1/2 cup chopped onion
1/2 cup butter
1/2 cup flour
7-8 cups milk
4 cups shredded cheddar cheese
1 cup sour cream
12 slices of bacon, cooked and chopped

Melt butter over medium heat and then add flour. Once it is well mixed add onion and saute until the onions are clear. Add milk and stir constantly, until thickened. Add potatoes, bacon, sour cream and cheddar cheese. Simmer for 20 minutes. Garnish bowls with green onions, bacon, cheese, and sour cream; optional!

To be honest, I do a lot of dumping and play with the portions a little bit. As long as you don't scald the milk this recipe is pretty forgiving. Enjoy!

A New Thanksgiving Tradition

This is a pumpkin pound cake that has become a tradition with my husband's side of the family. For these particular monsters, I couldn't find anything cute and fun, so I drew them myself. Sorry the picture is blurry, my camera has been acting up.

Next, I use a piece of wax paper and place my drawings behind it, so that I can see them clearly. Then I trace the drawings with melted semi-sweet chocolate. I found that a ziploc freezer bag works just great for this, just cut a small hole in one of the bottom corners. As you could see in the previous picture I only drew two monsters, so you need to carefully slide it under the wax paper to clean spot, to begin again. When I was finished, I slid my wax paper onto a cookie sheet or cutting board and put them in the freezer while I went on to the next step.

The next step is to melt candy wafers. Since I am only able to get to a place that carries these once in a blue moon, living in the middle of nowhere has an occasional drawback, the last time I purchased them I just got a big bag of white, thinking I would be able to mix what I needed later. I probably won't do that again until I find some better food coloring, the colors just weren't as bright as I had hoped.

It is best to follow the directions on the package of the candy wafers for melting, be careful not to over heat them. I also used freezer bags for this step. You need to fill a freezer bag with the melted wafers and carefully fill in your characters. Be sure to cover the entire area and then use a knife to smooth out your lines, being careful to not use too much pressure. You do not want your colored layer to be too thin, or they will break when you try to move them, but you do not want it too thick either. When I have finished filling the monsters in I place the chocolates back into the freezer or fridge to set up. I was in a hurry this day, so I placed them in the freezer. This is only the second time I have done this particular cake decoration, so I apologize if the directions are a little lacking. I must give credit to The Whimsical Bakehouse, I found the idea for these in their cookbook. They go into great detail, so the book is a great thing.

I love the look of these, it is have they came out of a child's coloring book! Have fun and be creative.

Just for fun!!

I picked up "Hello, Cupcake!" in memory of my grandma. She loved to bake and she passed away last week. Aaron and I made the owl cupcakes today. I used a devil's food cake mix and canned frosting. We used oreos, junior mints and flavored tootsie rolls. Gracie also made an owl before she went to dance class.

I plan to post more baking this week and I have a post on a spicy chicken dish that I have been making since I was a junior in high school! My new kitchen is almost done, I will post pictures of that soon. But today I am going to share with you a recipe that has many memories for me. We call it 'Haystacks.' Once a year my grandma would make this meal, usually in the fall, and whatever family that was around would be there for this meal. My family insists on this meal at least several times a year. Of course, they call it 'Hay Bales!' I promise you that you will enjoy it, it is one that we make often for company. We layer it on our plates in no particular order, but the order I am sharing is the one I was raised with. I will begin the recipe with the order and then follow with the recipes for the meat sauce and cheese sauce. The great thing about this recipe is you can adapt it to your taste and you do not have to include everything on your 'stack.' Enjoy!!

HAYSTACKS

crushed saltine crackers

rice

meat sauce

chopped/shredded lettuce

tomatoes

chopped onion

sliced olives

chopped pecans

cheese sauce

Fritos corn chips

Meat Sauce

1.5 lbs hamburger
spaghetti sauce (I use Prego)
1/2 tsp Worcestershire
1/2 green pepper, chopped
2 ribs of celery, chopped

Cook hamburger, add gr. pepper and celery. Add spaghetti sauce and Worcestershire. Simmer for half an hour. Salt and pepper to taste.

Cheese Sauce

1 stick of butter
1/2 cup of flour
3 - 4 cups milk
16oz cheddar cheese, shredded
mustard
salt and pepper

melt butter in a medium saucepan, over medium heat. add flour and whisk constantly. Once flour and butter are combined add 3 cups of milk. Stir often until milk starts to thicken. Add shredded cheese a cup or so at a time. Stir until cheese is melted, if too thick add more milk. Add mustard to taste, start with 2 tsp. Add salt and pepper.

So Sorry

I just wanted to write a quick note and apologize for not updating this blog for quite some time. I hope you are doing well. I also want to thank my faithful followers who have been checking in regularly. I am so sorry I haven't had anything new in quite some time.

Enjoy!!

Grandma's Caramel Rolls

This is one of those recipes that has been handed down from my grandmother. Separate into 2 halves, roll into a rectangular shape of your desired thickness. Spread softened butter onto dough, sprinkle with brown sugar and cinnamon. Roll and cut into 1 in - 1 1/2 in. thickness.

Caramel:
1 cup vanilla ice cream
1/4 cup heavy cream
1/2 cup white sugar
1 cup brown sugar
1 cup butter
1 tsp pure Almond Extract

Cook until melted, and then pour in pan before putting in rolls. Bake about 23 minutes on 350 degree oven.

I feel it is very important not to over bake these rolls. I hope you enjoy.

Happy Birthday, Gracie!

Saturday was Gracie's birthday, it was also my Spring/Summer Tastefully Simple Open House. We had one of those weeks you hope never happen, so I was running around like crazy on Saturday. Gracie was very specific on her request for a cake and I was so rushed that it didn't turn out the way I had planned. It is never good to rush, especially when you are baking and decorating. I may make another one just to make up for the lack of creativity on this one. But, I did do exactly what she asked me to do: a chocolate cake with chocolate frosting and green grass and of course her ponies that she cleaned so they could be used.

At the last minute some friends joined us at Grandma and Grandpa's house for supper and cake. Too much has been going on for me to sit down and recall how I made this. Please forgive me. Also, I can never remember to take pictures, but I hope to do some baking today and I will try to remember to take pictures of that. I am also working on an instruction post to show you how I made the bugs on my first post for this blog.

Alright, I am ready to begin my recipe. I will keep it simple. Remember the last two times I have made this I was catering, so I didn't make my homemade alfredo sauce. I am going to share the recipe for this lasagna using store-bought alfredo, if you would like my recipe let me know and I will post it.

Chicken Lasagna

3 cups shredded chicken ( I usually just boil and shred one whole chicken)
1 10oz frozen box of chopped spinach, thawed and wrung out in a clean towl
10-12 cloves of garlic, minced
1/2 of a purple onion, finely chopped
1-2 Tbsp olive oil
3-4 cups mozzerella cheese, shredded
1 jar of alfredo sauce, if you love garlic, the garlic alfredo is very good
6 lazagna noodles

Preheat oven at 350 degrees. In a large pot or skillet, heat olive oil over medium heat. Add garlic and onion. Saute until onion is transparent, add spinach. Once spinach is heated through add chicken and alfredo sauce. Heat until warm.

Spray 9x13 pan with cooking spray. Spread 1/3 of alfredo mixture on bottom of pan. Next layer 1 cup of cheese. Then layer 3 lasagna noodles. Follow with 1/3 alfredo mixture, then cheese, then 3 lasagna noodles. Finish with the final 1/3 of alfredo and top with cheese, you may add more cheese to this last layer if you choose. Cover with aluminum foil and place in oven for roughly one hour. You may take the aluminum off for the last 5-10 minutes to brown the top of the lasagna.

I hope you enjoy. As I have said, most of these recipes are mine and I rarely measure, unless I am baking. That is what I love about cooking, I can create something different all of the time. I also like to make this alfredo sauce and use bowtie pasta and toasted pine nuts! Yum!!

My Catering Event

Last night, I catered the After 5 event held at Common Ground. This is the second time I have done this. I had a good time once again, thanks to good help and the added bonus of their request for the same thing I made the first time I catered for them. My chicken lasagna. Of all my recipes, this is the one that is requested the most. I can't even remember why I created it, but it has been a favorite for many years. It is full of all kinds of yumminess, but that is all I am going to say for now. I hope to post the recipe tomorrow.

I fed 51 people last night and the menu was:

lettuce salad with my version of Olive Garden's salad dressing
chicken lasagna
garlic bread
fresh strawberry cupcakes with cool whip/strawberries

There were more requests for the recipe and they asked me to include it in their cookbook. They are celebrating their 25th anniversary. I am so glad they asked me to do this, I always have so much fun!

Considering my personality, I always surprise myself by pulling off these events without stressing myself out and being behind schedule. Those of you that know me, know what I am talking about. But, I have been able to be ahead of schedule each time (3 total)!

Diamondback Chicken Pasta

Today's recipe came about because we don't ever get to go to restaurants any more. There was a wonderful Mexican place in the KC area that we frequented and I would often get their Rattlesnake Pasta. This is my take on it. I have to say this is the closest I have ever come to replicating a dish on taste alone. This also includes a Tastefully Simple Fall/Winter product, as well as something from the standard line.

I should also tell you that the first time I made this I did not have enough for everyone to have the thirds they were requesting so this is the recipe doubled. It probably would feed eight adults easily, but my hubby says it is even better the second day!

Diamondback Chicken Pasta

4 large boneless, skinless chicken breasts
1/3 to 2/3 tequila
1Tbsp lime juice
salt and pepper
olive oil
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 red onion
8 oz cream cheese
1 packet Viva Garlic! Alfredo Sauce Mix (Tastefully Simple)
1 pint heavy cream
1 stick of butter
approx. 1/2 c milk
1/3 c Parmesan cheese
2 Tbsp Fiesta Party Mix (Tastefully Simple)
2 bags of bow tie pasta, cooked

Marinate the chicken breasts with the tequila, lime and season with salt and pepper. I always like to marinate in a ziploc. Marinate for at least 1/2 an hour.

Grill chicken breasts, 10-15 min each side. Slice peppers and onion in half, brush with olive oil, and place on grill. Grill 3-5 min each side.

In a saucepan, combine heavy cream, cream cheese and butter over medium low heat, stirring often. When cream cheese and butter are melted, add the Alfredo sauce mix, Fiesta Party Mix and Parmesan cheese. Continue to stir. Add milk to reach a good consistency. I don't like it too thick, but like for it to coat the noodles well.

Combine noodles and sauce. Slice grilled chicken breasts and thinly sliced peppers and onions. Add to noodles or place on top of each serving.

I am new to creating recipes, and honestly, I do a lot of the 'dump' method. So please let me know what I need to explain or correct. I hope you enjoy this as much as my family does!!

Gourmet Grilled Cheese Sandwiches

I want to start my recipes with this very easy, very yummy sandwich. This particular recipe calls for something in the Tastefully Simple Fall/Winter line, which will be retiring this Sunday, March 8. The product is Italian Garlic Bread Seasoning. If you think this recipe sounds like a keeper to you, please contact your Tastefully Simple consultant before Sunday. If you don't have a consultant please visit my website at: tastefullysimple.com/web/kcampbell2.

Gourmet Grilled Cheese Sandwiches

1 Tbsp Italian Garlic Bread Seasoning
1 stick butter
loaf of sourdough bread, 2 slices per sandwich
deli ham slices, 2-3 slices per sandwich
provolone chees, 1 slice per sandwich
sliced tomato, 1-2 slices per sandwich
Dijon mustard.

Mix IGB Seasoning and butter together and let set for 20-30 min. Let griddle warm. If using an electric griddle, set at 325 degrees. Spread Dijon mustard on a slice of sourdough bread, layer ham, cheese and tomato on top. Cover with second slice of sourdough, butter the outer sides of sandwich with Italian Garlic butter. Place on hot griddle, cook for 2-3 minutes or golden brown and flip. Repeat for other sandwiches. Also, my husband likes to use pepper jack cheese instead of provolone. This makes 6-7 sandwiches.

Enjoy! I will soon include pictures, but I don't have any for these first few recipes.

Tomorrow . . . I love to bake. I will bake pretty much anything, but I especially love to make cupcakes. Something I have always wanted to learn and hope to share is the art of bread making. Not just your average bread but sourdough and french baguettes and maybe even croissants and bagels.

I also enjoy creating recipes for my family's meals. I hope to share these as well. I have some recipes that have been handed down from my grandmother, some that have been passed on to me from friends and family and a pile of cookbooks and food magazines beckoning me to try something new. I hope that having this blog will keep me accountable to trying new things and sharing with you what does and does not work. I also love to create my own version of meals that we have had at restaurants, I miss those wonderful places and now try to create my own version of our favorites.

I really do hope you will enjoy this blog and please share your thoughts with me at anytime.

These are a few pictures of things I have done in the past.
